Moms Eggless Butter Cookies for one or two

Easy No Egg, No Milk Small Batch Butter (Optional) Cookies

This recipe is adapted to make a small amount of buttery shortbread style cookies.  It’s great for when it’s just you and you need a quick sugar fix or you just don’t want a lot of leftovers.

This quick cookie recipe is also eggless and milkless for those looking for vegetarian recipes or anyone short on ingredients.

Butter Cookies for One (or Two)

4 Tablespoons Butter or Margarine
3 Tablespoons Granulated Sugar
1/2 Teaspoon Vanilla Extract (optional)
6 Tablespoons Flour
A Pinch (1/16 TSP) Baking Soda

Cream (mix) butter, sugar and vanilla together.

Add flour and soda. Mix well.  Dough will be heavy.

Drop by spoonfuls onto baking sheet, press slightly with the back of a spoon or fork.

Bake in a 375 degree oven for about 10 minutes.

Makes about 8 to 10 cookies, depending on size.

NOTES:  You can mix this recipe up in a small bowl with a fork for quick and easy cleanup.  — And it’s safe to lick the spoon!

For a crispier cookie, use 3 tablespoons of butter (or margarine) instead of 4 tablespoons.

Since it is a small recipe you can also bake this in your toaster oven!  I use an insulated baking sheet for best results.

Using margarine instead of butter will also work, but the taste will change.  Try a few drops of butter extract to make up for the lost flavor.  Or try almond extract for a change of flavor.

Since this recipe has no eggs, you can use it for a quick cookie dough sugar fix!  Or use a melon ball scoop or small spoon to create cookie dough bits for sprinkling over ice cream or as an ingredient in other dessert recipes.

Butter Cookie for One Recipe Variations

Almond cookies:  Instead of vanilla extract use the same amount of almond extract.  Add an almond sliver to the center of each cookie for decoration.

Nutty Cookies:  If you have them, add up to a tablespoon of finely chopped walnuts, pecans, almonds or other nuts.

Add a festive touch:  Sprinkle with colored sugar just after they come out of the oven.  Their heat will make the sugar slightly melt and adhere to the top.  Try red and green sugars for Christmas, silver or clear and blue sugars for Hanukah, red and blue for 4th of July or orange and black sugars for Halloween!

Confectioner’s Sugar:  A fine dusting of confectioner’s sugar after baking adds a nice touch too.

Chocolate Chips:  Add up to 2 tablespoons of mini or regular chocolate chips, coarsely chopped chocolate or other candy.
